James "The Cheese Guru ” Ayers is one of Sunshine Foods most valued renewable and sustainable resources. Originally hired for the vast cooking and culinary skills he had developed in such fine restaurants as San Francisco’s Il Fornaio, and Napa Valley’s Napa Valley Grill, James’ knowledge and love for fine cheese soon made him the obvious choice to design and manage Sunshine’s specialty cheese department.
Since the beginning of the specialty cheese department in 1997, James has studied and extensively toured cheese operations throughout America and Europe, especially the regions of Madrid, Toledo, and Valencia Spain, constantly keeping abreast of the old and new nuances of the cheese world.
James’ relentless search for eclectic knowledge has also aided him in becoming a serious, and noted, “Mushroom Hunter ”, Brewmeister of his own home micro-brewery, and a “pretty up-and-walkin’ good ” Blues guitarist and singer.
Like so many artisans, James would rather taste and talk about cheese than to sell it, so Sunshine Foods has surrounded him with an efficient, well-informed staff to ensure that James is always available to discuss Cheese, Wine, Beer, Porcini’s, ..…………….. or maybe even a little Mississippi Fred McDowell with his customers.
